TERROIR AND VINE MANAGMENT:

GRAPE HARVEST :

Hand-harvested and destemmed, the grapes undergo fortification on the skins followed by 30 days of maceration, extracting aroma and polyphenols to create a wine of fine structure and balance between fruit, alcohol and sweetness.

TASTING NOTES:

The nose opens on aromas of walnut, spice and orange zest, with a fresh profile and delicate pastry notes. The palate is harmonious and finely textured, with remarkable finesse, balanced by subtle bitterness, gentle spice, cherry jam and a hint of cocoa. The finish is exceptionally long. A deeply seductive expression of this outstanding vintage.

WINEMAKING:

The wine is aged for one year in glass demijohns placed outdoors under the sum, then in 350 hl old oak foudres. This exceptionally long élevage, a hallmark of Mas Amiel, lends the wine profound aromatic maturity and remarkable structural depth.

FOOD PAIRINGS:

The 1988 vintage is best enjoyed with savoury pairings such as beef fillet en croûte with a Maury sauce. More classic matches include blue cheeses such as Roquefort, or desserts based on chocolate and dried fruits. Open one hour before serving and decant at 15°C.

THE OXYDATIVES OF MAS AMIEL

UNIQUE WINEMAKING TECHNIQUE

Our oxidative Vins Doux Naturels, made from old-vine Grenache grapes fortified while still on the skins, spend one full year under the open sky in glass demijohns, exposed to the Roussillon sun and its dramatic temperature shifts, before continuing their slow, decades-long evolution in century-old casks.

VINIFICATION OF SWEET WINES

Oxidative wines pair beautifully with sweet dishes such as desserts or chocolate, unveiling their full aromatic richness.

Thanks to the unique character of Grenache grown on the Mas Amiel terroir, these winesretain remarkable freshness and vibrancy, resulting in a beautifully balanced wine.Their distinctive rancio notes, resulting from the long natural oxidation, also open the door tomore daring pairings, such as aged cheeses,walnuts or coffee, offering profound and refined tasting experiences

PARCELS, GRAPE VARIETIES & TERROIR

90% Grenache Noir, 5% Maccabeu, 5% Carignan

The soils, composed of weathered schist and black marl, benefit from a full south-facing exposure that ensures optimal ripening of the grapes. Vineyard management prioritises traditional ploughing to preserve living soils and encourage deep root systems. The old-vine Grenache, over forty years of age and trained in the traditional goblet bush form, delivers naturally low yields of around 18 hl/ha, with a planting density of 3,500 to 4,000 vines per hectare.
