The character of the Grenache Blanc and Maccabeu asserts itself immediately with a bright, taut nose defined by fresh, crisp grapes, before opening up to reveal a basket of ripe citrus, juicy pear, and white peach.
It is an aromatic origami where notes of white flowers, lemon zest, and fresh almond mingle with dried herbs, fennel, and warm stone. A textural origami, too: the palate is tactile and saline, stretching out with breadth and gaining creaminess without ever losing its freshness, sustained by a lingering, mouth-watering finish.

A blend of indigenous grape varieties-predominantly Grenache Blanc, along with Maccabeu—from the heart of Mas Amiel.
Oiseau Rare is a selection from a few old white-grape vines at the heart of Mas Amiel, situated on the calcschist slopes of the Mas Amiel and Las Fredas vineyard sites.
Hand-harvested and directly pressed, the grapes are vinified at low temperatures (17°C) using the estate's indigenous yeasts, without oenological additives or added sulfites prior to bottling, in order to preserve the fruit's full freshness and purity.
This blend is aged for eight months in small concrete tanks and stoneware jars. These materials preserve the wine's vibrancy and the freshness of its fruit character. OISEAU RARE is aged without sulfites until spring, at which point a small amount of sulfite is added at bottling to support the wine during cellaring.
